Jezzri’s Korma Adapted from the Curry Bible by Pat Chapman
2-3 Chicken Breast, chopped into 1-1 ½” cubes*
2-3 med. potatoes, chopped 1-1 ½” cubes & boiled, barely softened*
2 carrots, chopped into bite size pieces *
3 tablespoons vegetable oil
1-3 tablespoons finely chopped garlic
1 tablespoon fresh finely chopped ginger
1 large onion finely chopped
½ cup heavy whipping cream or low fat plain yogurt
10 oz coconut milk
1 tablespoon finely chopped fresh cilantro leaves
2 teaspoons ground almonds
2 tablespoons silvered almonds
2 tablespoons Cashews (optional)
2-3 tablespoons garam masala
1-2 tablespoon white sugar
1-2 tablespoons salt
Masala
2 tablespoons ground coriander
2 tablespoons curry masala
1 tablespoon ground cumin
1 tablespoon turmeric
1 teaspoon chilli powder
½ teaspoon ground cardamom
½ teaspoon ground cloves
1 teaspoon fennel seeds (optional)
1. Cut chicken, potatoes and carrots. Boil the potatoes until
they just begin to be soft.
2. Add enough water to masala mixture to pour easily..
3. Heat oil in wok or large pan until very hot Add the garlic
and stir briskly for 30 seconds. Add masala mixture cooking
for an additional 30 seconds.
4. Add the ginger and onions, reduce heat and cook for
approximately 10 minutes or until the onions have
caramelized.
5. Remove from heat and puree the mixture, either by hand
held electric blender or in a blender. Be careful with the
mixture, as it is very hot.
6. Add the coconut and cream or yogurt. Add chicken and
carrots. Simmer for 10-12 minutes, stirring occasionally.
Add water if necessary to maintain “thickish texture”.
7. Add the remaining ingredients, including salt to taste, and
continue cooking and stirring for a final 5 minutes or until
chicken is fully cooked. Checked the chicken by removing a
large chunk and cut in half to ensure it is white all the way
through.
8. Enjoy with rice and naan.
